Avocado-Tomatillo Dressing

You can use this recipe as a salad dressing, condiment, or dip (comparable to guacamole).

Ingredients:

1 canola cooking spray
6 Tomatillo, fresh, medium, husks discarded; rinsed in cold water (about 8 ounces)
1 Avocado, average, fresh, peeled and chopped (about 1 cup)
1 fresh green onions, chopped (green and white parts)
2 medium garlic cloves, minced
1/2 whole jalapeno pepper, seeds and ribs discarded, chopped
1 tsp sugar
1 tsp fresh lemon juice
1/2 tsp ground cumin
1/2 tsp chili powder
1/4 tsp salt
1/8 tsp black pepper

Preparation:

Preheat the broiler and lightly spray the broiler pan with vegetable oil spray.

Cut the tomatillos in half with a sharp knife, and put with the skin side up on the prepared pan. Broil 4 to 6 inches from the heat for 5 minutes, then, turn and broil for 2 to 3 minutes, or until the tomatillos are slightly tender.

Put the tomatillos in a covered container and refrigerate for at least 10 minutes in order to cool.

Process the tomatillos with the remaining ingredients for 1 minute in a food processor or blender.
